You won't 'always have plenty', even when rationed correctly, because there's a limit. If you could store stamina away or convert it into stamina potions, then yes, rationing is very possible, but it caps with no way to save it. It's a real pain when you play each day and just 2 runs of Cretan Labyrinth takes 90, you only have 180 to use, meaning 90 left to grind for the needed supplies to craft new equipment. Sure, it all works out when you give a little time and patience and get the materials the next day, but the wait is just painful. And like you said, you gain at least 75 daily, but if you're at zero, waiting could be the motivation to leave this game.
Also, take into consideration the whole idea of upgrading at once vs upgrading at a fair pace. If your equipment is already at max/10, meaning you have time right now to use the blacksmith, but you don't have the stamina required to grind for materials needed to craft stronger equipment, the next day, you'll find yourself in a bind to either wait 4+ hours or use gems for cooldown, just to catch up to the day you lost because stamina is such a pain to recover. Plus, you'll go through Cretan again, and if you have other heroes who also need equipment leveling... *shivers* brings back nightmares.
My suggestion: have 5pts of stamina as an arena reward to balance out the cooldown. Either that, or raise the frequency of gems as reward in arena. Also, if excess stamina becomes a problem, add more ways to deplete stamina. Bottom-line is that stamina recovery, as is, is a downfall for this game.
