Well one thing is for sure while the XP does transfer perfectly using Gems the star level can change. Just went from a 6 star Leopard to a 5 star Tiger using the gem transfer. I still gained in HP though so it's all good. That just means to me that there is a higher ceiling on the bigger mounts above and beyond the star level of the lower mounts.
