Well one thing is for sure while the XP does transfer perfectly using Gems the star level can change. Just went from a 6 star Leopard to a 5 star Tiger using the gem transfer. I still gained in HP though so it's all good. That just means to me that there is a higher ceiling on the bigger mounts above and beyond the star level of the lower mounts.
That is because star levels vary with different mounts based on how much experience is needed for that mount. However, what I have seen is that if you have 3+ stars being transferred, even with the lower star, your HP bonus should increase.
