    first of all before i give my 2 cents:
    the stats you will transfer are randomized and you have no influence at all on them. meaning if you transfer a AA5 dawn then you will get a AA1 ezK with random sancts.
    that should have answered your following questions all at once, but if there is any doubt then any sancts are nice to have on khan, defensive and attack. if you decide to remove sancts then you should remove first sancts like not so usefull blue (but remember, mostly 2x blue = gold), magic resist and morale. any other especially crit and block are usefull.

    to your edit: i have a +14 block on my khan, the others are defense and a skill one.
    thing is, if you cant beat him now then your saints may help but will not be the relevant factor to tip the game unless you get something crazy like +75 resist and +90 crit or so...

    PS: i suggest to check the forum about ezk, there is some forms and other advice you can use and here is some more andy is doing a great job collecting them and keeping the index up to date
